Jeez, this thread is making me hungry. Nothing quite like good grilled (or pan- or deep-fried) fish. Can be healthy, too, depending on how you prepare.

You can also make a thick-paste sauce and apply to the fish before grilling. It'll make your grill a bit funky afterwards (to clean, just use high temp and charr it off), but it'll allow you to cook properly.

A spray of pam can also help.

No you will not get the smokey flavor that the outdoor grill provide. You can use a small amount of liquid smoke to help if using an indoor grill.
