Anything from the Warren Miller films if you want skiing/snowboarding scenes without a plot.

A few Bond movies come to mind - the opening sequence of The Spy Who Loved Me is great. For Your Eyes Only as well has a few choice skiing scenes while Bond is being chased by an Olympic Biathalon competitor and his goons.

For more risque scenes, try Hot Dog: The Movie. The Chinese Downhill is classic.

Edit: Great minds think alike - re: Bond. James Bond.
I was going to suggest the Warren Miller films as well. A bit extreme perhaps, but usually long, continuous, real footage of one or a few skiers on one run versus the Hollywood magic of editing together the best shots of several days of filming and possibly multiple physical locations.
