Tofu and broccoli stir fried with some San-J sauce (various flavors) and tamari sauce over rice.
Or tuna fish and macaroni and cheese (and whatever else has been sitting in the fridge) casserole.

When we were kids and money was tight, Mom would make "corn fritters" - basically a can of cream corn and sautéed onions mixed in instant pancake mix. In the summer we would have "tomato gravy" - fresh garden tomatoes stewed and creamed, served over toast wedges. And of course cold tuna macaroni salad and hot tuna casserole were staples.

Heck, you can make meringues from garbanzo bean juice.

It doesn't take lots of money. It takes attention and a little work.
