What I have is an mp4 that is an hour long speech. The main point is about 30 seconds and I want just that.

Quicktime Pro can "crop" out specific bits. I do it all the time. If you don't have Quicktime Pro, MPEG Streamclip can also crop out bits. I've used that method as well.

MPEG streamclip is your best bet, otherwise QT Pro or iMovie (or Final Cut if you have it)

The New QuickTime X can also edit/Trim the clip. Free in 10.6
