How would you cook perch fillets on a gas outdoor grill?

Aluminum foil wrapped?
Iron skillet?

Iron skillet over hot (high) burner. Allow the skillet to get hot and then add a little olive oil (it should be "dancing") and quickly cook the fillets... add some lemon juice if you want. . . yum!

or the foil route.

I do salmon fillets laid on top of doubled-over foil sprayed/wiped with olive oil, and laying on a bed of thick onion slices. The onions sacrifice themselves so the salmon doesn't burn. And as they cook/smoke, they flavor the salmon as the smoke and steam wraps around the salmon on the way out of the grill.

Spray some olive oil on the grates just before you put the fish on. Grill the fish 90% done on one side before flipping it to finish it off. Oil on the grill and cooking it mostly on one side before flipping it will keep the fish from falling apart.

true. Same with burgers. Let the meat/veggies develop a crust that will release.

Do what ajakeseki said; I've been grilling fish of all kinds for many years. I use nothing but a little salt/pepper to taste, and grill. Bluegill, crappies, bass, eel, etc., it all works great.

You really want to pan fry or deep fry perch. Grilling is not their forté.
