(Yes, I'm late to the party... I'm several years behind the curve on OS's at work, and even farther at home...)
Can't just image the startup drive to an external any more, huh? Or at least, they hid it well... Resorting to Carbon Copy Cloner!

OS X Upgrade: take a perfectly fine piece of software, remove features, make menus and buttons less intuitive, reduce color contrast, make it flat, and distribute only through App Store.

You might also be running into a "feature" that existed in the El Capitan version, not sure if it has been changed in Sierra.
If you try to make a compressed read-only disk image of a volume (.dmg file), the new DU insists that the destination has enough disk space to contain the entire source volume, including unused space. Say it's a 500 GB source volume, with only 1 GB used on it and it will compress down to 100MB. The new DU will not allow you to start the operation unless the volume that the destination .dmg will be saved to has 500 GB free.

They originally bunged it up in El Capitan. Continued the bunging in Sierra (I think--haven't really looked at Sierra much).

Which creates a new blank image... which was not what I wanted. I wanted a "clone" of the startup drive to an image.
CCC worked in 12 minutes. I spent at least 10 minutes trying to use Disk Utility.

I used to use DropDMG to create disk images of Mac volumes. Never used it to create a hard drive clone, but it might work.
Then again, CCC is a much better tool for this task.
