Does DIY ceramic pizza stone block oven heat from lower element? - Dennis S - 02-19-2019 I have a 16" unglazed tile on the lower rack. Someone said they heard Chris Kimball say it blocked the heat from the bottom element and left a "cold" spot in the center of the oven. Does this make sense? When I cook a pizza I put it on a flat round pizza pan on top of the stone. I leave the stone there for all other baking. Assuming the pizza stone has come up to the temperature of the oven, it should help regulate the oven temperature and even out fluctuations such as when you open and close the door as it will retain its heat while the hot oven air escapes. But I could see how it could be considered a cold spot before it comes up to temperature since it might take longer to preheat with the stone vs an empty oven? However, I have no direct experience with a pizza stone. Re: Does DIY ceramic pizza stone block oven heat from lower element? - Sarcany - 02-19-2019 The point of the pizza stone is to absorb and then radiate heat evenly for those items that you're cooking on the stone. I'm guessing, but I think that it may well block the direct heat from the lower element for those items on an upper-tray, but if so then you just need to pre-heat your oven a bit longer and you will probably then benefit from the more even distribution of heat. If it's electric, the extra pre-heating time may waste some power. If it's gas, I wouldn't worry. Not sure about the case with a convection oven. Re: Does DIY ceramic pizza stone block oven heat from lower element? - mrbigstuff - 02-20-2019 It has to heat for about an hour before setting a pizza on it. that way, it is properly heated across. otherwise, the top of the pizza will cook (and even burn) well before the bottom has even turned color.
