Which is not to say that they won't be very good. But often, the ingredients are not so fresh. I do ask for recommendations from waiters when I can’t decide between two dishes. Usually we will ask how some special was. We know who will give the honest, it's great others have said it's to die for, or I had a bite earlier and it was wonderful. These same trusted W/W will also say, not the chef's best effort, or whatever also. When they know that you tip well, they take better care of you. Not foolproof, but it often works.
