Do you mean putting a new tire on a wire wheel, or just replacing a flat with the spare (already mounted on a wheel)?

If the latter, it would be different, but shouldn’t be much more difficult. Knock-off hubs can be a little more work than lug nuts, but not necessarily “a bitch”, and when the rear is jacked up (a necessary step), the wheel is exposed enough for a normal replacement.

The rear fender has a removable wheel cover and knock-off wire wheels are simple to remove with a hammer. Easy, peazy. Note that many '60s american cars also had wheel covers.

I believe what you're referring to is technically a "fender skirt". A "wheel cover" would be just the disk attached to the wheel itself; basically an enlarged "hub cap".
