Help me cook a steak - CharlieStango - 02-06-2007

I have ruined many steaks. I can never get it right or even come close. Tonight I have a NY strip steak and before I go to the store I wanted to see how you think I should cook it. I cant use the BBQ because it's cold out.

That is a sad excuse - it's never to cold to grill out !

Saw on the New York Times website about cooking steaks under the broiler in your oven. It's like upside-down grilling. Basically you get an iron skillet and leave it in your oven, which is turned up to maximum, oven-cleaning temp, until the skillet is hot, real hot. Then you put the steak in the skillet and put the skillet under the broiler for 8-10 minutes and Viola! Steak. Looked good to me.

Oh COME ON! I grilled out last night - and it was -12 here in Northern IL! Superbowl will do tha tto you I guess.

If it 's a thick one, then definitely pan seared is the way to go. Get a good old black skillet - HOT HOT HOT, sear it, and lock in the flavor.

Excellent technique - used it a few times, I would rub with garlic, and the Montreal Steak seasoning is fantastic stuff as well. Both would be on my steak for sure.

And, a tiny pat of butter on the steak once it's out of the oven adds excellent flavor.

Finish it off with sliced mushrooms, sauteed in that same pan.

That's why you need to be drinking a nice cold beer while you're standing at the grill. The alcohol will keep you warm til the steak is done. I'm with lafinfil on this one, it's never too cold to grill.

I grill until it's just too cold to stand outside and wait (like now; it's 5 degrees above).

When I'm forced inside I use a Murphy Grill. It's a flat pan w/ raised ridges that lives on the stove top. Got mine at a gourmet shop. I get it super hot and sear the seasoned beef. Depending on the steak's thickness, turn anywhere from 2-3 minutes.

An approximate way to test doneness is accomplished by pushing on the "drumstick" at the base of your thumb (mound of venus - no joke) w/ the index finger of the other hand and comparing it to a push on the cooking steak.. Rare is what it feels like when you push on just the thumb. Medium rare is what it feels like when you hold your thumb and index finger of the same hand together and push. Medium's thumb and middle finger. Medium well's thumb and third finger. Well's thumb and pinky. The muscle tightens as your fingers move further from the thumb itself. Just appoximate; you need to do this a few times to get the right "feel" for the way you want your steak cooked.

The Murphy Grill's not perfect, but I prefer it to the home broiler where I can't get enough heat to slightly crunch the outside while keeping the center soft.

Oven-cleaning temp? Good luck with that!

I read the same column in the NY Times (Mark Bittman, The Minimalist), and it said nothing about oven-cleaning temp.

Most, if not all, home ovens automatically lock the door when set to oven-cleaning temp. I've heard many stories of people doing this unintentionally, and what came out of the oven afterwards was not a pretty sight.

Other than that, Bittman's technique did sound interesting, although the cut piece of steak in the accompanying photograph looks way overdone to my taste.

You need to broil with the door open, and the oven cleaning step always locks the door.
