Shake or not Shake? Cow vs Goat milk. - special - 03-02-2025

We have someone with lactose sensitivity in the house and that person drinks goat milk. the rest of us can drink regular (Cow) milk.

I noticed the Goat milk carton says "Shake Well" but the cow milk cartons do not indicate the need to shake. I'm just curios what is it in the Goat Milk that requires shaking? Thanks

Is the cow milk homogenized as well as pasteurized?

Pasteurization is a process that uses mild heat to eliminate harmful microorganisms in foods and beverages, such as milk and fruit juices, to extend their shelf life and ensure safety. It was developed by French scientist Louis Pasteur in the 1860s.
Wikipedia/Encyclopedia Britannica

Homogenizing refers to the process of making a mixture uniform in composition or structure, often by blending diverse elements into a consistent mixture. A common example is the homogenization of milk, where fat globules are broken down and evenly distributed throughout the liquid.
Wikipedia/Merriam Webster Dictionary

Sorry if this is already well-known info.

It is likely that the cow milk is homogenized and will not separate into cream/whey layers.

Goat milk is not likely homogenized. But check the labelling.

Globules. That's the future.

i just checked the cartons. Both say "Ultra-Pasteurized", none of them say Homogenized.

Probably the cow milk is homogenized (Costco BTW) and it does not say so on the carton.

Thanks

Milk fat in goat's milk is different from that in cow's milk and separates differently. The fat is in smaller globules and normally does not require homogenization like cow's milk, but may separate slightly over time. This also makes butter churning a bit different for goat butter.

Your cow milk has already been skimmed for cream; there will be minimal or no separation because there isn’t enough left to make any difference (or you can’t even see it). Goat milk not so much.
