Purple Potatoes! - kap - 04-09-2009

Has anyone here eaten that type of potato? I have been told it is more nutritious. What is the most simple recipe? I just want to have a taste test first.

I have seen them for sale before, and I think someone used them on Iron Chef America.

I've seen them at Corti Bros. In Sacramento. I've never tried them though.

I would make french fries and dip them in homemade mayonnaise.

I've eaten them in Peru. I've also bought them at my local Ralphs supermarket. They're potatoes. They're not really any different from a similar waxy spud.

I've never tried purple potatoes but I do grow a purple carrot, the variety is Purple Haze so I had to try it of course. Surprisingly easy to grow and very tasty.

We have cooked them a couple of times.
Surprise. They taste like potatoes.
They do add a splash of color to the dish.
