It has been raining here again multiple days in a row. I had some fresh asparagus in the refrigerator.
So I sauteed some red native onions, and garlic in a small amount of butter and Omega 9 oil. Next
added 1 cup of water, and some chicken stock. I reduced this after adding 2 cups of chopped asparagus.
I added another couple ounces of water and reduced this a little more.
In the blender I had mixed a cup of fresh milk and a cup of coconut milk. To this i added the the reduced asparagus concoction and blended until creamy. I put everything back in the saucepan added a little salt and pepper and "wala" almost instant Cream of Asparagus Soup.
The only thing missing was a good white wine *(:>* The soup was/is delicious/9:18pm here.
