Thinking aloud here, since my iMac 7,1 is finally starting to feel its age.
For the most part, a desktop doesn't bother me, so a new iMac, or new Mini, whenever they appear, would be ok.
But, sometimes I think a portable would be useful, and while browsing with an iOS device is tolerable, I still prefer a full browser.
Maybe a refurb duo Mini + MBA is the right combination of peanut butter and chocolate...

$100 off, no discrete GPU.

Lets be clear, we are talking about a nearly 7 year old iMac. Most people dont even keep cars that long.
Based on that limited info, I would say that you are not a "power" user.
Have you boosted your current iMac? 4 GB of ram? SSD boot drive?
"late 2007" is far easier to understand than "7,1"
*any* new Mac, even the lowest 11" MBA, will be faster.
Not sure what your budget is, but a nice setup might be a 13" MBP + an external monitor. Best of both worlds.

What do you think a "more affordable" iMac will entail?
Yes, probably limited to knocking $100 of the price, similar to the the MBA move.
They've already dropped the optical drive, and soldered in the RAM in the 21.5 (which lowers production cost).
So solder in the RAM on the 27"? No discrete graphics except in a high-end 27"?
No IPS display except on a high-end 27"? Drop the 21" and 27" for a 20" and 24" and bring out a new >27" display? I don't think these are even remote considerations, just trying to think of ways to actually make it "more affordable".
Oh, and look for a real bargain on electrolytic caps.

the RAM is not soldered into a 21.5" iMac.

Nope, not a power user. Had max RAM in this machine since day one, but no SSD as of yet.
A 27" i7 iMac would be nice, but probably overkill.
I'm thinking a big external monitor that could be shared between a Mini and an MBA 11" or other portable might be the ultimate goal, with the latter probably coming later. I'd like to move away for the all-in-one form factor.
But first, Apple needs to get off their duff and update both.
