I am confused about the question. Is your son biking or are you carrying him on your bike? That makes a huge difference in the amount of weight you are carrying. Is this ride supported in any way or is this just the two of you? Is there access to water and are you filtering or treating water to drink or carrying all the water you need? Those questions make a big difference to the kind of meals you can cook when camping. Do you have a backpacking stove to bring or are you cooking on a fire? What kind of pans or pots are you going to use (if any)? The minimalist approach is to boil water and pour that on something freeze-dried, or on oatmeal for breakfast. But if you have water and a stove and an appropriate pot or pan to cook with, you can basically make anything he likes.
