Anyone know if SIM cards work across manufacturers? Can I put the SIM from my Nokia in a Samsung and use it without dealing with the provider?

Yes you can. The sim is carrier specific, not phone manufacturer specific. I have used the sim from my blackberry in a Nokia, and it is now in my iPhone.
