I wanted something Dessert-y, whilst down with the flu...
This is from "A Feast of Memories. Black Country Food and Life at the Turn of the Century" by Marjorie Cashmore
Five Minute Pudding
3 Tablespoons Flour
3 Dessertspoons sugar
1 Dessertspoon baking powder
2 eggs
a little jam
Mix all incredients together except jam. Spread the mixture on to an oblong baking tin and bake for 5 minutes in a moderate oven. Spread with a thin layer of jam and form into a roll. Serve with Custard.
Pauls Notes:
a UK Dessertspoon equals 2.4 US tsp.
I didn't think to look up any difference between a US and UK Tablespoon.
I replaced about a third of the sugar with honey (equal volume). 'Cause I felt like it.
I think UK eggs are the same as US eggs... 'cept maybe the chickens cluck with an accent... (ever seen Chicken Run?).
I used a 9x13 pyrex dish, greased with butter.
I used Black Current jam (all I had open). And YES, it was within it's "best before" date... (eat 11 year old Blackberry Jelly ONE TIME - think anyone lets you forget it? ;-) )
It made three servings rolled from the 9" side.
I think it would be great with Apricot jam!
Now I'm going back to bed...
