I can get an apple refurbished 21.5" iMac at the same price considering all these options. Which would you choose. I just do some surfing, loading my photos doing some photo enhancements..... not many apps.
Would you choose an iMac with 8GB memory and 2 TB fusion
or
16GB memory with 1 TB fusion
or
Retina display with 8 GB memory and 1TB fusion?

Not really up on iMacs, but I'd probably get the retina. And if possible, rip out the fusion drive and put a real SSD in it.

Retina display with 8 GB memory and 1TB fusion, hands down. Those graphics are amazing. 8GB is plenty of memory for what you need.

And another vote for the 8GB/1TB/Retina
Adding more storage is easy, cheap and with USB 3, very fast.

I had this same internal debate last spring. I went with the smaller fusion and max ram. I may never need more than 8GB in it, but you never know. Can't do it after the fact. You can always add more external storage.

Nope. But super fast fusion drive makes up the difference for his use.

Except for the Retina, which is late 2015, you're not indicating the model/year.
RAM is soldered in and not upgradeable on recent 21.5-inch iMacs.
It's upgradeable (not easily) on older ones.
I'd be cautious about getting less than 16GB RAM if it's soldered in.
...Also, FYI: The 1TB Fusion drive is a huge ripoff. Apple screws you on the SSD component, uses a tiny one that can barely hold the OS and a few files. Don't go less than 2TB if you're going Fusion.
