I've never tried but I've been slow cooking lots of meat this summer, and I should probably try to smoke some bacon. any hints from those who do?

Never done uncured pork belly, but I do smoke / cook bacon.
Put it away from the fire to avoid flare ups. Comes out chewy and very smoky. Delicious

Not intentionally. But I left some outside and now its smoked. Second worst air in the state. I've read that many of the sensors in eastern WA are automatically discarding readings because they're outside of the 'reasonable' range that they'd been programmed with. They're assuming that it's an erroneous reading.
