Long ago, I read that potatoes are much better, nutritionally speaking, if you leave the skins on, that it somehow negates some of the bad aspects of the massive starch content.

Sometimes I use chopped green olives. Also chopped hamburger dills instead of relish. Also I like Hellman’s Mayo best. Some garlic powder helps.
