Is there any guidance on setting fixed ip addresses? IE: is it an issue to set fixed ip addresses consecutively? I've done this in the past with certain devices such as security cameras. Recently had new Fios ONT and router installed and am having occasional connectivity issues once I set a bunch of fixed ip addresses in the Fios router admin page. Wondering if this could be the issue.

I only use a fixed IP address for my NAS and for my PiHole DNS server.
But at work I had an application where I wanted fixed IP for certain devices and I set up the router to give these addresses based on the MAC address of each device. It works great, never had issues.

You can definitely use consecutive addresses.

For a LAN, making static IPs isn't an issue. You have to either turn off DHCP for that range of IPs and exclude it from the DHCP scope on the router/domain server or assign it via MAC adddress on the router/server.
