The dark blue/purple berried varieties of elderberries are edible when fully ripe. They are mildly poisonous when unripe. The seeds of the red berry varieties are poison and need to be removed before the berries are eaten. All green parts of the plant are poisonous.

Elderberry juice is made into wine. The blossoms can be used to make a tea. Juice from the berries and flowers is also consumed as a beverage.
