Cappuccino Pound Cake
2 2/3 cup all purpose (organic) flour
2 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 cups sugar
1/3 cup brown sugar
1 1/2 teaspoons vanilla
6 large eggs
1/3 cup strong espresso
2/3 cup heavy cream
1/2 lb unsalted Plugra, or regular butter (Plugra will make this richer), melted and cooled
Preheat oven to 350F
Grease and flour two loaf pans
Mix flour, baking powder, salt, and cinnamon together
Whisk sugar and eggs until light.
Mix in vanilla (and orange peel if using)
Beat in the espresso and the cream
Add the flour mixture gently
Fold in the melted butter
Pour into the pans and bake for 50 to 55 minutes, or until it tests done

Meanwhile….

Espresso Syrup
1/4 cup strong espresso
1/4 cup water
3/4 cup sugar
1/4 cup brown sugar
Bring to a boil, stirring and boil for one minute.
Cool

Remove the cakes from the oven and cool for five minutes. Remove from pans and poke holes in the cakes with a meat fork. Put back in pans and pour the syrup evenly over the cakes. Allow the cakes to soak up the syrup before removing from pans.

Garnish with chocolate shavings or bittersweet chocolate ganache.

Any ingredient I can substitute to make the cake less frighteningly fat? Can I sub Arms and Hammer with baking powder? TiA

They're two completely different kinds of cakes. Pound cakes are, by nature, very rich. If you substitute much of the fat, you no longer have pound cake. The second recipe is, by design, a lighter cake. Both sound good!

I don't understand your question "Can I sub Arms and Hammer with baking powder?" Arm and Hammer is a brand of baking powder. What were you trying to ask?

I am new to baking so pardon my ignorance Smile
An office mate told me not to use A & H. Use baking powder instead. That was how my question came about.
Yes, both recipes sound delicious but I will stick with the coffee cake recipe. It's simpler.

Careful... Arm and Hammer ALSO makes Baking SODA. NOT the same as baking powder.
Aside from that, me and baking don't get along so good... however the local Costco and the local Safeway both have exceptionally good bakeries. Big Grin
