what is the advantage over a temp probe you leave in place?

It's much quicker to read out and if you've got multiple spots to check for doneness, it's handy. Also useful for quickly checking water or other temperatures if making tea / coffee / other things that may not want 212F/100C water for steeping.

If you want something really geeky, get one of their Thermapens. I have one. It uses a thermocouple, and it truly is instant read. It's astonishing how quickly it gets a reading. Like in a second or so...

I am VERY HAPPY with Weber Instant-Read Thermometer for $10.
I checked in ice, 32F, boiling water, 212F. Stick in in the meat on the grill, 3-4 second and you have your reading.
