... forward them to phishing email senders with a spoofed 'from' address, and get them arguing with each other ?

If it pretends to be from an institution I have a relationship with, I forward it to their security folks, then immediately delete it. Otherwise I immediately delete it.

If it's to my .mac account, I forward it to iCloud.com, but it doesn't seem to do much good. Hey Apple, this is something you need to work on a bit.

I almost never see them let alone do anything about them. I rarely peruse my junk folder. Once or twice a year, I'll find something in there that doesn't belong, otherwise I don't read any of it. Life is too short to waste any time at all on what to do with your spam.

Companies are bad enough responding to CS issues via email, I don't think any of them read any forwarded spam. What are they gonna do - open an investigation? On 1,000,000 forwarded spam emails?
