recipe for sweet potato ravioli?

I had this at a restaurant recently and it was to DIE for. I couldn't believe how good it was. There was no sauce, it must have been cooked in olive or or something that wasn't obviouse. Does anyone have a recipe to share?

How about squash recipe's? I had some fancy squash at a restaurant that I thought was potatoes but it had such an incredible explosion of flavor, really delightful.

You don't want to make sweet potato pasta unless you are really experienced at making your own pasta. It is very difficult to make the stuff hold together. It is much more fragile than regular durum pasta. You might be able to find some at a gourmet store though.

Making gnocchi of sweet potatoes would be much simpler, and it would be delicious with marinara and sausage.

We don't have a gourmet grocery store around here. I wonder if I could order it online? Or maybe just wait till I go to a big city and freeze it. What are some good gourmet grocery stores wether they be online or in the seattle area?

Are you talking about ravioli filled with sweet potato, or orange colored pasta?

If you just want orange pasta, use carrot as the coloring agent. Boil the carrot until it's practically mush, then put it into the blender to completely mash it up. Add a small amount of this to your pasta dough.
