It was almost two years ago when I did my big move and universal binaries were a much bigger deal then.

Anything recent will be universal.

To answer your other question, yes a universal binary will run on Intel or PPC without you having to do anything special. There are a few Intel-only applications. I mean "a few" literally. I don't recall any of them off the top of my head but you probably aren't using them. One of Adobe's professional sound apps comes to mind but I could be wrong.

Also, PowerPC OS X apps will run on Intel machines through "Rosetta". Nothing special you have to do, just launch the app. It's PowerPC Classic apps (pre-OS X) that don't work.
