In Texas they are "Chicken Fried Steaks", the 'country fried steaks' are a northern corruption of the real thing. Normally abbreviated as just a "Chicken Fry". As in "I'll have the Chicken Fry with gravy".

Been a long time since I've been to Dallas (~15 years), so it's possible things have changed.
