As a diabetic, I never make dessert. What is a simple one to make for guests?

I cook a lot and have friends over regularly and never even consider dessert. But, I get the feeling they may be expecting it. What is something easy that would hit the spot with them? I can't store things like ice cream or anything premade because I would eat it.

I'm in the same situation and tend to avoid dessert, though I'll make an exception for cheese cake. But, I'd think in terms of stuff that is easy to make and will result in minimal leftovers. 'course, you can also make a desert that is diabetic-friendly. Sugar-free Jell-O. Comes to mind.

But, if you aren't concerned about that, make brownies, cookies or something else that is a mix that comes out of the box from the baking section of the supermarket. Very easy. Minimal fuss. Always yummy.

Or, cookies made from Pillsbury premade mix from the dairy section. Open package. Slice. Drop on baking pan. Cook until done. Easy to drop in a bag so you can ensure your guests take leftovers home with them.

Or, if you want to be really bold, carrot cake. Personally, I think it's a side dish but to each his/her own. Smile

A ton of things come to mind but short of cutting up some melon and dropping it into a bowl, I'd stick with something cheap, easy to make and easy to take home or something that is sugar-free/low carb and acceptable within the confines of your diet.

Meringues with strawberries and whipped cream. Very easy to make, and they don't keep, so no morning-after temptations.

Robert,

I don't want to make sugar-free stuff because it won't be as good to my guests and it will still be too many carbs for me after all the carbs in a meal. I'd rather make something decadent for them and let someone take it home, although it doesn't have to be decadent - just simple to make.

Definitely go to the baking section of the supermarket. You'll find just about everything you'll need to make something yummy and decadent and it'll be _very_ easy. Cookies, brownies, cupcakes, sheet cake, you name it. Icing. Typically, all you'll need is an egg and some milk. Grab disposable foil baking pans. No muss, no fuss.

Why not ask the friends you have over regularly that might be expecting it ?

Buy a watermelon and borrow Deckada's Wild Thing.

What about sweet potato pie? I used to make it using the recipe from a can of pumpkin. There are just a few ingredients to add that I usually have. I could make pumpkin pie, but sweet potato pie seems a little special to me for some reason.

Cannoli dip- done in 10 minutes. 16 oz Ricotta cheese, 8 oz marscapone (use the good stuff if you can find it- whole milk, imported, etc.) Blend well until smooth and creamy. Start adding small amounts of confectioners sugar, vanilla extract, mini chocolate chips, and chopped pistachios until it all tastes good (might have to have someone else be the guinea pig.) If you are feeling adventurous, add some orange zest and/or Grand Marnier for some lovely orange flavor.

Let it sit in the fridge for an hour or two before serving if possible.

Serve chilled with cinnamon sugar pita chips or broken up waffle cones.
