Looks like it can also be used to deploy other software too that would normally require someone sit in front of the Mac or act as if they were (via Remote Desktop, etc.)
One example I saw on the forum there is where someone put together a pkg for deploying Office 2008 which included the handful of stuff each Mac would need to run, including the various .plist files that hold the serial and generic user info.
