you can also use Goodreader to do an on-the-fly conversion of a PDF to text, which allows you to resize text and it flows nicely on your phone, so there's not alot of scrolling. You can always switch back and forth between PDF and text view if there are figures/tables or other things that don't get converted properly.

Why would you want to convert them?
The iBooks app opens PDF files natively now. Any decent ereader app on the iPhone will open PDF docs.
'Seems kind of silly to endure the inevitable loss of formatting and screwed up text that come with conversion when you can read the files in their native format.
