Yikes!! That's about double what I paid for coach the last time I went to Kauai from Seattle, which was in 2008. You should be getting that flight for around $600 or less round trip. I just looked at Alaska's site and found seats in that range for March.
Why waste money on first class? Spend it on the experience of being in Hawaii instead. You won't get there any faster in 1st class and it's only what 5 hours - coach is fine.
Full flex on Alaska means you can get a refund or change the ticket at no fee, it's usually the most expensive ticket after 1st class. For me it's never been worth it to pay for full flex, you can pay a fee to change lower priced tickets if you need to.
As for preferred seating, that just means that certain seats, aisle and window, are reserved near the front of coach. Again, you can choose from other good seats when you book the ticket.
