Cannoli dip- done in 10 minutes. 16 oz Ricotta cheese, 8 oz marscapone (use the good stuff if you can find it- whole milk, imported, etc.) Blend well until smooth and creamy. Start adding small amounts of confectioners sugar, vanilla extract, mini chocolate chips, and chopped pistachios until it all tastes good (might have to have someone else be the guinea pig.) If you are feeling adventurous, add some orange zest and/or Grand Marnier for some lovely orange flavor.
Let it sit in the fridge for an hour or two before serving if possible.
Serve chilled with cinnamon sugar pita chips or broken up waffle cones.
