As a diabetic, I never make dessert. What is a simple one to make for guests?

A delicious and very easy dessert involves getting the Triple Ginger Snaps from Trader Joes and making mini-ice cream sandwiches with two of these and a bit of vanilla ice cream between. Keep in freezer and then serve. Awesome, look fancy. I like breyer's vanilla bean, but small thing of Haagen Das also good.
