Seems like at this time of year a fruit and cheese platter would be good - 2-3 really good cheeses, fresh berries and melon, maybe some peaches.
Lots of folks are watching their waistlines, and this is something anyone can eat - gluten free (which seems very important to some folks) and those who don't do dairy can still eat the fruit.
Bonus is that you can eat some too!
However, if you want something "fancy" a good, homemade chocolate mousse with a bit of whipped cream is easy and quick.
