I really want a new iMac too, maybe end of the year, would be fine with a current model as a refurb. Could even get by with a 256 Flash only model. But would like the i7 and 4 GB of VRAM for bragging rights.
FWIW on your plan. 16 GB (8 x 2) = $100. A single 16 GB chip = $200.
So for the price of 24 (4 + 4 + 16) you could just go to 32 (8 + 8 + 8 + 8) and sell the stock 8 GB =)
Other than the retina screen I'm not sure I can justify moving from a mid 2011 27" iMac. It has a 3.1ghz i7 Quad core, 2GB graphics card, 32GB of ram, room for a 6TB HD as well as a 1TB SSD, and still has an optical drive. No USB3, but that can be rectified with a Thunderbolt dock.
