I love making waffles and eating waffles and made some today. I have a waffle iron that flips, have used that type for years, and do think that works much better. The best waffle irons get really hot and hold that heat evenly. Homemade batter using buttermilk is better, but bisquick works just fine.
Anyway, you are asking about using a waffle iron for other recipes, not cooking waffles. I would never do that. Waffle irons are hard to clean and I don't really wash it. I would not want cheese and other gooey stuff getting in there. A panini maker would make more sense there (I make panini's with cast iron pans).
