Not sure that you're missing anything.
Menstrual-tracking?
if you have no need for the menstrual tracking app simply delete it. i did. women hold up half the sky and are a market to be developed for.
Right.
Point is that there are not a lot of useful changes to the watchOS and the most notable change -- the new menstrual tracking feature -- may be one that rjmacs can do without.
The few new things that I have noted on the watch include:
The list of apps that you get when tapping the stem has larger icons and text (had to tweak the text size settings in the watch app to make that look better);
The Activity app now shows some awards if you swipe past the old challenge screen. I was under the impression that there'd be more new stuff here. There's not.
The App Store app is a bunch of annoying adds. Have not seen any use for it as yet. Maybe the model7 will be independent of the phone and an App Store will be useful at that point.
The new calculator app is nice, but I already had a calculator app on my watch that did all of that.
The Workout app can show stats from your last workout (as a preset minimum for your next workout), but the "open" button to start a new workout seems to now be way more sensitive than the other buttons so every time that I review my history I inadvertently start a new workout and wipe the stats.
...There's no "Noise" app on my watch or in the Watch app. I have a model3. I guess this only appears for model4/5 users.
