Cat6 can run at higher frequencies over longer runs. That allows for Gigabit connections, and higher gigabit speeds over long runs.
Buying the cable, just browse around online, I'd suggest Pricewatch and Froogle to help a bit.

One thing about the connectors, there's a type that is like an RJ45/RJ11 hybrid (so you wouldn't need to keep stock of both jacks). The hybrid connectors are not Mac Compatible. (At least not easily. None of the systems I've tried with them have worked easily).
