The HDI-30 SCSI System Cable (M2538LL/A) has 29 pins. Use that to connect the Zip drive to the PB.
(or)
The HDI-30 SCSI Disk Adapter cable (M2539LL/A) has 30 pins. Use that to connect the PB to the 6360, which puts the PB into SCSI disk mode.
Or, you could connect the PB and 6360 via LocalTalk with LocalTalk adapters.
Or, you could use a SCSI-to-Ethernet adapter on the PB.
If it were me, if I still owned a SCSI PB I'd have both cables on hand.
