I believe the trick is to keep a couple backup copies of the .xml files that live in the same directory as your "iTunes Music" folder. "iTunes Library" and "iTunes Music Library.xml". You can ignore all the other ones from the older versions of iTunes that get left behind. I'm not sure, but you might really only need the latter of the two mentioned above.
You'll probably want to keep an older version or two as well, just so you don't end up overwrite a good one with a corrupted one at some point.
Another trick: you can actually make backups of your playlists by choosing Export… from the Edit menu, after selecting a given playlist. You'll be prompted to save a file somewhere named "PlaylistTitle.xml". You can restore these at any time in the future.
