Look at the Options>Advanced>Applications on the 8800 (I'm guessing here as I have an 8700). In this list, I have Blackberry Korean Characters listed. Not sure why as I didn't install it, can't read Korean, etc. I'm assuming that there may be a Chinese version available.
From what I can determine, you need BlackBerry Enterprise Server v4.0 and similar version handheld software to support Chinese characters. But it only allows you to see the characters, you can not input (type) the characters.
