In Word preferences, you can turn off anything you want, so you just have a bare document window.
I moved the toolbars over to be floating palettes, which I customized to be just what I want. And I mostly use the keyboard, so there really is no clunky user interface.
Word 2004 is massively customizable. You have have it look like almost anything. You could have it look like you are writing with a soldering iron on a piece of mahogany, if you want.
