Tire Ratings and Mixing them

Costco not wanting to put on tires rated lower than stock is just them covering their ass. Other places will do this for you. The implication is that the tires won't be safe. The reality is that they will be safe for normal driving.

The car's age has nothing to do with it. Tires are your most direct contact with pavement. Unless you're asleep or not paying any attention, you'll always notice SOME difference with good tires on any car.

They're like shoes on your feet. Think twice before deciding to save a buck.

For reliable dynamics, I'd match all 4 tires to be of the same brand and model. That way the car handles more predictably.
