For the record, Contacts (Address Book) and iCal are standard on the iPod Touch; you can add people/events to them from the Touch and they sync back to your mac. You don't need to hack your Touch, or pay $20, to use them.
Stocks and Weather are easy to get to from Safari. I seriously doubt Maps will be helpful on the Touch -- you'd have to have at least one wifi connection to download the maps.
Mail wold be handy, and maybe it'd be worth $20 itself, if free wifi hotspots were more common. If I'm at home, it's just as easy to check my desktop, or laptop.
Notes, though? I need notes. I'm tired of using the calendar or contacts for that.
What really, really bugs me, though, is that you can't read lyrics on the Touch unless you pay for the upgrade. I'm sorry, but that feature was on previous iPods. They shouldn't be charging $20 to reintroduce it.
