Another way is to create a custom iTunes library for her on her Mac. Then make a backup copy of the iTunes music folder with the copy located in an area where she doesn't have write permissions (erase permission). This could be in the home folder of another user account on the same machine.
If she ever deletes music that you want to restore, simply copy the track(s) back into iTunes from the backup copy.
Edit: Not having her machine on the network simplifies your life a lot I expect. You never have to worry about her unsupervised Internet usage on that machine or her hacking into the other machines on your network.
