I had a Dual G5 2.0 that started doing that, and I also suspected I needed a new power supply. So I bought one from a company selling on eBay under the user name "wefixmacs". They seemed reasonable, and emailed me a PDF of installation instructions.
But before it arrived, I got a new motherboard battery from OWC, and popped that in. Sure enough that was all it needed - no more random or immediate shutdowns! If you haven't already tried that route, then you may be able to save a lot of time and money. If you have already tried that, well, feel free PM me about an unused PSU that's taking up closet space in my office. I've since given my G5 away, so it's not very useful to me. Either way, good luck!
