First, if you want to set up a server using Mac OS X client (not the expensive macosxs), check out DIYmacserver. It's good resource that includes tips for setting up a POP or IMAP mail server.
Second, unless heat and energy aren't an issue, I'd avoid using the G5 tower as a 24/7 server. I'm guessing that machine pulls 250 watts w/o a display. A cheap macmini will pay for itself in energy savings alone in about 3-years AND it's much faster and you can use it as a media server connected to your TV. I went the frugal route with my server. I used my 10-year old pismo, which draws 12 watts and can pretty much do everything that macosxs can do for my 4 computer household.
I don't know the requirements for Cubase, but maybe you could sell the G5 and get another laptop (macbook or g4 powerbook) and do what you need to do while not turning your home into an oven when you run your server all day.
