Depending on how thorough the tests were (endocrine inclusive) - various enzymes would be way off from
the banana - which is another reason fasting is preferred.
In particular, amylase - a primary marker for tests involving pancreatic function - as this is the first
to attack (via saliva initially) starches and convert them to successively smaller molecules of sugars.
Ultimately it ends up as serum glucose or stored as glycogen.
