Right click on the desktop and select Properties*, click on the Screen Saver tab, then the Power button, and it should pull up the Power Options Properties panel. There you can configure Power Schemes and there will be a Hibernate tab if the hardware supports it.

Edit: you can find a fair amount of information by just opening My Computer, clicking on Help, Help and Support Center.
